Pumpkin, beloved for its role in fall décor and enjoyed by families everywhere when carved into masterpieces, is also an impressive source of nutrients when added to our diet. Pumpkins are very high in fiber yet low in calories. An amazing source of Vitamin A, one cup of mashed pumpkin provides more than 200% of your recommended daily intake. Vitamin A is important for healthy eyesight. There’s more to the pumpkin than the flesh; roasted pumpkin seeds are a tasty treat that pack a good nutritional punch of their own. Research has shown the seeds are high in cholesterol lowering nutrients, making them a heart-healthy snack.
